# Red Bean Buns
Homemade. From scratch. Worth it.

## Ingredients
**For the filling**
- 200g dried red beans
- 80g sugar
- 30g lard (or butter)
- Pinch of salt
**For the dough**
- 300g all-purpose flour
- 5g instant yeast
- 15g sugar
- 160ml warm water
- 10g lard

## How to make it
**The filling**
Soak red beans overnight. Next day, simmer until completely soft — about an hour. Drain, mash, then cook in a pan with sugar and lard over low heat, stirring until thick and dry enough to hold its shape. Let it cool.
**The dough**
Mix flour, yeast, sugar, and lard. Add warm water gradually, knead for 10 minutes until smooth. Cover and let it rise for 45 minutes. It should double.
**The wrap**
Divide dough into equal pieces. Roll each one thin at the edges, thicker in the center. Add a spoonful of filling, pleat the edges up, twist and press to seal. Sealed side down.
**The steam**
Into a bamboo steamer lined with parchment. Steam over high heat for 15 minutes. Don't lift the lid early.
