Herb Garlic Chicken Marylands
Ingredients:
4 chicken marylands (leg and thigh pieces)
2 tbsp olive oil
4 garlic cloves, minced
1 tbsp fresh rosemary, finely chopped
1 tbsp fresh thyme, finely chopped
1 tsp paprika
1 tsp salt
1/2 tsp black pepper
1/2 cup chicken broth
1 tbsp lemon juice
Instructions:
1. Preheat oven to 200°C / 400°F.
2. Mix olive oil, garlic, rosemary, thyme, paprika, salt, and pepper. Rub all over the chicken.
3. Place chicken in a baking dish skin side up. Pour broth and lemon juice around the chicken.
4. Roast uncovered for about 45–50 minutes until golden and cooked through.
5. Rest briefly, then serve warm with the pan juices spooned over the top.
