- 24 baby potatoes, halved
- 1 1/2 tbsp olive oil (for potatoes)
- 1/2 tsp salt (for potatoes)
- 1/4 tsp black pepper (for potatoes)
- 1 tsp dried parsley (for potatoes)
- 4 cups green beans, trimmed
- 1 small carrot, thinly sliced
- 1 tbsp olive oil (for green beans)
- 2 garlic cloves, minced (for green beans)
- 1/2 tsp salt (for green beans)
- 1/4 tsp black pepper (for green beans)
- 1 tbsp fresh parsley, chopped (for garnish)
Directions:
1. Begin by preheating your oven to 400°F (200°C) and lightly greasing a large baking dish.
2. In a bowl, toss the halved baby potatoes with 1 1/2 tbsp olive oil, 1/2 tsp salt, 1/4 tsp black pepper, and 1 tsp dried parsley. Spread them on one side of the prepared baking dish.
3. In another bowl, combine 2 tbsp olive oil, 4 minced garlic cloves, 1 tbsp chopped parsley, 1 tsp dried oregano, 1 tsp dried thyme, 1 tsp salt, 1/2 tsp black pepper, and 1/2 tsp paprika. Rub this flavorful mix evenly over the chicken breasts.
4. Place the seasoned chicken breasts next to the potatoes in the baking dish and pop it in the oven. Bake for about 25 minutes.
5. While that's baking, prepare the green beans and carrot. Toss them with 1 tbsp olive oil, 2 minced garlic cloves, 1/2 tsp salt, and 1/4 tsp black pepper.
6. After 25 minutes, take out the baking dish and add the green beans and carrot to the space around the chicken and potatoes. Return everything to the oven and bake for an additional 12–15 minutes, or until the potatoes are tender and the chicken’s internal temperature reaches 165°F (74°C).
7. Once done, let the chicken rest for about 5 minutes before slicing. Serve everything beautifully arranged on plates and sprinkle with fresh parsley for that pop of color!
