**Ingredients**
Shandong thin crispy pancake (煎饼) — made fresh on the griddle
Whole Shandong scallion (大葱) — thick white base, long green stalk
Sweet bean paste (甜面酱) — dark, glossy, spread with a bamboo brush

**How it's made**
The batter goes onto a seasoned black iron griddle over an open flame. A bamboo spreader pushes it outward in one wide sweep — thin as paper, maybe thinner. The edges crisp up before the center is even set. You peel it off from the edge while the griddle is still smoking.
Lay it flat. Brush the sweet bean paste across the center in a single stroke — dark, thick, not too much. One whole scallion goes down across the middle, white end to green end, pressing slightly into the sauce.
Then you roll it. Both hands, working from one edge, pulling it tight as you go. The pancake crinkles and folds around the scallion. You can feel the layers when you hold it.
Cut it across at an angle. The cross-section opens up — concentric rings of golden pancake, dark sauce between each layer, and the scallion at the center, ivory white, holding the whole thing together.
That's it. Three ingredients. No heat after the griddle. The crunch comes from the pancake, the sweetness from the paste, the bite from the raw scallion. Nothing else needs to be there.
